The Kilimy Moroccan tagine pot is a clay cooking tagine with a shallow round base and a tall conical lid, shaped by hand on the potter's wheel in Marrakesh, Morocco, by Abdelhak Ah. It is glazed on the outside and inside the base, in three diameters: 22 cm (8.7 in), 27 cm (10.6 in) and 32 cm (12.6 in).

The cone-shaped lid returns condensation to the dish, so food cooks slowly in its own juices, and the same pot goes to the table. It is made for a gas or electric stovetop, over low heat with a heat diffuser, and it needs curing before first use. Each tagine ships from Morocco with a Kilimy Origin Passport naming its maker, and duties and taxes are included on US orders.

Which size to choose

A Moroccan tagine pot is sized by the diameter of its base. As a guide, sellers of Moroccan tagines usually offer about 25 to 27 cm (10 to 11 in) as a tagine for two and 30 cm (12 in) and above as a family size. This tagine comes in 22 cm (8.7 in), 27 cm (10.6 in) and 32 cm (12.6 in), so check the diameter against your burner and your heat diffuser.

How it is made and who makes it

Tagine, also spelled tajine, is the name of both the pot and the dish cooked in it. This tagine is shaped by hand on the potter's wheel in Marrakesh, Morocco, by Abdelhak Ah. It is glazed on the outside and inside the base, then fired. A band is painted around the lid, and its pattern varies from piece to piece, so yours may differ from the photos.

The potter describes the work this way: "We put our heart into each batch, even when we have three failing in a row. The end product is a journey of handwork and patience."

Kilimy has verified the maker and the city. Both are recorded on the Origin Passport that ships with every tagine.

First use, cooking and care

Curing is the first-use step that prepares a clay tagine for heat. A new tagine can have a slight earthy smell and some fine clay dust, and both are normal.

  • Cure it before first use: wash the base and lid with warm water only, dry them fully and rub the inside of the base with a little olive oil. Heat it in a cold oven to 100 to 150 C (212 to 302 F) for 1 to 2 hours, let it cool completely inside the oven, then wipe off the excess oil.
  • Cook on low heat: use a gas or electric stovetop with a heat diffuser. Add a little oil, water or broth before heating, start low, and never put a cold tagine on high heat.
  • Avoid sudden temperature changes: do not move a hot tagine onto a cold surface or into water. Handle it with oven gloves, because the clay gets hot.
  • Wash by hand, without soap: once it is cool, use hot water and a soft sponge. Rub stuck food with coarse salt or baking soda. Dry it completely before storing.
  • Do not use it on induction, or in the dishwasher, microwave or freezer.

Questions

How do I season a Moroccan tagine before first use?

Wash it with warm water only and dry it. Rub the inside of the base with a little olive oil, place it in a cold oven, heat to 100 to 150 C (212 to 302 F) for 1 to 2 hours, and let it cool inside the oven.

Can I use this tagine on a gas stove?

Yes. This tagine is made for a gas or electric stovetop. Use a heat diffuser between the burner and the tagine, add a little liquid first, and keep the heat low.

Does this tagine work on induction?

No. A clay tagine does not heat on an induction cooktop, and this one is not suitable for induction.

Can this tagine go in the oven?

Only for the first-use curing, at 100 to 150 C (212 to 302 F), starting from a cold oven. For cooking, this tagine is made for the stovetop.

Why do clay tagines crack, and how do I avoid it?

Clay tagines crack from thermal shock, which is a sudden change in temperature. Heat the tagine slowly on low heat with a diffuser, and never move it from hot to cold.

Can I wash a tagine with soap?

No. Wash this tagine by hand with hot water and a soft sponge once it has cooled. For stuck food, rub with coarse salt or baking soda and a little water.

What happens if the tagine arrives broken?

You receive a full refund. Email Kilimy support within 48 hours with photos of the packaging and the tagine.

Even more beautiful in person

The pieces look even more beautiful in person, especially when they are lit. The fact that you noticed the crack during your final quality check and chose to replace the piece rather than send it to me says a lot about the standards you have for your work. The letter from you and the certificate of verified origin were also a wonderful touch.
